Happy Holidays from Chef DK! This has been a very busy season for us, on Thanksgiving alone we served over 500 people at several different events. Now that Christmas is just a day or two away, we wanted to send out this free recipe to help your family enjoy a little slice of Chef DK as well!

Still not sure what to make for that perfect Christmas dinner? Here is a recipe that is sure to impress:

Prime Rib with Thyme Demi Glace and Giant Pop Overs

6 to 7lbs of Prime Rib (for best results, use T&H Meats prime rib)
4 cloves garlic copped very fine
1 cup rough chopped celery
1 cup rough chopped peeled carrots
2 cups rough chopped onions
2 cups dry red wine
4 cups beef stock
1/4 cup cubed unsalted butter cold
Kosher salt
Fresh cracked pepper
8 sprigs of fresh thyme

Preheat oven to 400 degrees
Let prime rib sit at room temperature for 30 minutes
Place chopped veggies in shallow roasting pan
Place prime rib on top of veggies and rub with garlic and season with salt and fresh pepper
Place in oven and roast at 400 for 15 minutes then lower temp to 325 and cook until internal temp is 135
Pull from oven and let rest
Place all the roasted vegetables and pan drippings in sauce pan
Add red wine and reduce by 3/4
Add stock and reduce by 1/2
Add thyme and let simmer for for 10 minutes over low heat
Staring off sauce and return to pan
Slowly whisk in cold butter. Season with salt in pepper.

Popovers ingredients:
6 eggs
1/4 peanut oil
2 cups milk
1 3/4 cups flour
1 1/2 teaspoon salt
olive oil as needed

Preheat oven to 350
Combine eggs and oil in bowl and slowly whisk in milk, flour and salt
Oil ramekin or large muffin pans
Pour batter into ramekins or muffin pan and bake for 45 minutes until popovers are brown
Serve with prime rib
