Sausage and Peppers

Yield: 10 Servings


For Sauce:

1 Large Can Peeled Diced Tomato

3 Clove Garlic, Minced

1/2 Cup Fresh Basil, Chopped

Olive Oil As Needed

2 Teaspoon Sugar

Salt and Pepper to taste

For Sausage & Peppers:

4lbs. Sweet Italian Sausage, Sliced in 1/2 Inch Pieces (T&H Sausage)

2 Onions, Sliced

2 Red Bell Peppers, Seeded and Sliced

2 Pablano Peppers, Seeded and Sliced

3 Cloves Garlic, Minced

Olive Oil As Needed

1 Cup Tomato Sauce


Crusty Italian Bread


For Sauce:

Heat oil in heavy bottom sauce pan. Add minced garlic and sauté briefly. Add canned tomatoes and bring to simmer, stir occasionally. Simmer 15 minutes. Add chopped basil and simmer an additional 10 minutes. Season with salt, pepper and sugar.

For Sausage & Peppers:

Brown sausage pieces in heavy bottom sauté pan with a little olive oil. Remove sausage after browning and reserve. Add peppers and onions to pan and sauté until tender. Add garlic and cook to aroma. Season with salt and pepper. Place sausage back into pan and add tomato sauce. Simmer together for 10 minutes. Adjust seasoning and serve with crusty Italian bread.
