Corned Beef Hash

1lb. Corned beef (cooked), medium diced

1/2lb. Russet potatoes, peeled, small diced

1/4lb Yellow onion, small diced

2 Cloves garlic, minced

8 Eggs

1/8lb. Butter, unsalted

Salt to taste

Pepper to taste


Heat cast iron skillet over high flame. Toss together corned beef, potatoes, onions and add to hot pan with 1/2 of the butter. Toss lightly, then allow to crisp (about 5 minutes). Flip and crisp on other side. Add garlic and season with salt and pepper to taste. Cook eggs to over easy, season with salt and pepper to taste. Serve with hash.
